MAI CHAU VALLEY – HOA BINH, VIETNAM

Nested itself between ranges of mountain, Mai Chau exposes its beauty of a peaceful valley. Not being amazingly picturesque, it gives me an impresion of being modestly quiet.
The small stilt wooden houses situating themselves on hill side or leaning on rock cliff bring me back to the memory of a simple love dream that i used to treasure, the rhythm of Chapi dream….

Canh Chua (Fish Sour Soup)
Canh chua originated from the Mekong Region, more specifically from Dong Thap Muoi. Canh chua is a fish sour soup made with fish from the Mekong River and so dua flower. This dish is mostly served when the so dua flower first blossoms at the end of the rainy season. A feast is organized and the fish sour soup is among the delicious meals prepared for this event. Fish sour soup must be eaten very hot. It must also be eaten all at one time since the taste is altered when the soup is reheated.

Chao Tom (Grilled Shrimp Paste)

Banh Cuon Trang Bang (Rice Cakes)
Trang Bang, located 40 km from Ho Chi Minh City, is where one can find the best rice paper and rice cakes.
Both can be found everywhere, but nowhere are they better than in Trang Bang where they are made from local rice. The rice flour is roasted for four or five hours and made into thick cakes. Once the cakes are dried, they are placed into nylon bags.
These cakes can be eaten with shrimp, meat, salad, and coriander. During Tet, the cakes are served with roasted meat, eggs, and sour mustard.

Cau Mong Beef
Cau Mong beef is a specialty of Cau Mong, located 15 km from Danang, Dien Ban district, where nearly ten restaurants serve the dish. Cau Mong beef has been served for a long time and is found in many places outside Danang, such as Hoi An, Tam Ky, Vinh Dien, and Ho Chi Minh City.
The meat along with its skin is cut in thin slices, half cooked, and eaten with nem, which consists of fish sauce mixed with soy sauce, sugar, chili, garlic, lemon, star fruit, vervain, and green banana.

Hu Tieu (My Tho Noodle Soup)

Back in the 1960s, a shop in My Tho, 70 km from Ho Chi Minh City, started serving this dish using a secret recipe for the rice noodles. Ever since then, its reputation has grown to become a very well known meal in Vietnam.
It is said that the most delicious noodle soup is made with Co Cat rice, from the most famous rice growing area of My Phong village, a suburb of My Tho.

Tom Chua (Hue Sour Shrimp)

Because of the national reputation of this dish, some cooks and merchants specialize in making sour shrimp. In the past, people made this dish at home, but now it is easier to buy it at the market.
This dish can be prepared with any kind of shrimp. The recipe includes a number of steps that must be performed in a specific order. First, the fresh, clean, and dry shrimp of approximately the same size are put in wine along with dry bamboo shoots, garlic, and chili. The ingredients are kept in a closed container at room temperature for three days. Then the container is put in a cool, dry place. After five or seven days, the sour shrimp are ready.

Com Hen (Hue Mussel Rice)
Hot white rice is part of every meal in Vietnam, but only Hue mussel rice is served cool. Hue people, after deciding that no food should be wasted, have designed this dish using leftover rice.
This dish includes Chinese vermicelli, bamboo shoots, lean pork meat, and an assortment of green vegetables (banana leaves, mint, star fruit, etc.).
The broth obtained after boiling the mussels is used to flavour the rice. Ginger, sesame, and chili are also added to the broth. Hue Beef Noodle Soup
One must have years of experience to cook excellent Hue beef noodle soup. This recipe mainly consists of shredded meat and rice noodles. Most restaurants and merchants in Hue do not make the rice noodles themselves; they buy them in Van Cu and Bao Vinh, two villages located near Hue.
Learning how to make a clear broth from bone and meat is also a difficult task, but cooks have the satisfaction of seeing customers enjoying a good meal. The secret of this recipe resides in the meat–this is why it must be bought directly from the slaughterhouse early in the morning. The meat is then shredded, boiled, and taken out of the water to obtain a delicious clear broth.
The amount of salt put in the recipe varies depending on the season; during summer, Hue beef noodle soup is served with soy bean, mint, and different kinds of lettuce; in the winter, the recipe is saltier and lemongrass and fish sauce are added.

Nom (salad)
This dish is a combination of a variety of fresh vegetables, usually used in salads in Western countries. The make-up of Nom, however, is slightly different.
The main ingredients of Nom include grated pieces of turnip, cabbage, or papaya, and slices of cucumber with grated, boiled, lean pork. Other auxiliary ingredients include grated carrot, slices of hot chilly, and roasted ground nuts. These are used to make the dish more colourful. All are mixed thoroughly before being soaked in vinegar, sugar, garlic, hot chilly, and seasoned with salt.
The presentation of the dish is also very meticulous. The mixture of ingredients is put into a dish before being covered with vegetables.

Nem Ran or Cha Gio (fried spring roll)
This dish is called Nem Ran by northerners and Cha Gio by southerners. In Hanoi, the introduction of Nem Ran dates back to a time when Cha Ca had not existed. Although it ranks among Vietnam's specialty dishes, Nem Ran is very easy to prepare. Consequently, it has long been a preferred food on special occasions such as Tet and other family festivities.
Ingredients used for Nem Ran comprise of lean minced pork, sea crabs or unshelled shrimps, two kinds of edible mushroom (Nam Huong and Moc Nhi), dried onion, duck eggs, pepper, salt and different kinds of seasoning. All are mixed thoroughly before being wrapped with transparent rice paper into small rolls. These rolls are then fried in boiling oil.

Faifo Dainty (Danang)

Dainty fiber is carefully made by putting rice in water containing ashes from wood found in Cu Lao Cham. Then, the rice is ground and quickly boiled to make a fibrous mixture. Dainty can be preserved only one day, which is why it is boiled and dried. Dainty fibers have a dark-yellow colour.
The filling for dainty consists of lean pork and other condiments that are stir-fried. Then, the dainty is cut into finger-long pieces that are dried and grilled. Finally, the filling is put into the dainty. For a saltier taste, one can add fish sauce. Chicken meat cut in squares combined with small shrimps can also be added to the recipe.
Although dainty is not a popular meal in Vietnam, it is still served in certain restaurants in Ho Chi Minh City.

Banh Cuon (Rice Flour Steamed Rolls)
Eating banh cuon for breakfast is a great favorite among many Vietnamese.
Banh cuon is made of rice flour. Thoroughly selected rice is soaked overnight, then ground with a stone mortar. Food preservatives are put into the flour to make the rice sheets softer and smoother. A screen of cloth used to mold the rice sheets is fitted over the opening of a pot of boiling water. Flour is spread on the screen and covered with a lid. After a few minutes, a bamboo stick is used bcuon01.jpg (9105 bytes)to strip the thin layer of flour off the screen. Then it is rolled up and sprinkled with fried onions.
A small village in a suburb of Hanoi is famous for its banh cuon. People there serve it with a dressing comprised of lean meat, shrimps, mushrooms, dried onions, fish sauce, and pepper.
All the ingredients are stir-fried and rolled into a banh cuon.
Banh cuon is delicious when it is very thin, white, and sticky. It is even tastier when dipped in a sweet, sour, and spicy sauce.

Bun (rice vermicelli)
Vietnamese vermicelli is a luxurious as well as a popular dish. There are different varieties of vermicelli depending on their shape: bun roi or stirred vermicelli, bun mam or twisted vermicelli, bun la or vermicelli paper, and bun dem tram or shreded vermicelli.
Different ingredients can be served with vermicelli: grilled pork meat, fried rice cakes, snails, fried eggs, lean meat pie, chicken, and crab soup, to name a few.
Each region and locality, even each restaurant, has its own vermicelli dishes with their own recipes.

Mien (vermicelli made of cassava)
Mien threads are very long and tough, made from a kind of tuber plant called cassava. When served, the long tiny flour threads are cut into smaller pieces. Like rice vermicelli, this kind of cassava vermicelli is used to make several different dishes, the most popular being Mien Ga (chicken cassava vermicelli), Mien Bo (beef cassava vermicelli), and Mien Luon (eel cassava vermicelli).
Cassava vermicelli is also used for different dishes which are stirred in oil, such as Mien Xao Thit (vermicelli and pork stirred in fat), Mien Xao Long Ga (vermicelli and chicken tripe stirred in fat), and Mien Xao Cua Be (vermicelli and sea crab meat stirred in fat).

Banh Tom (crispy shrimp pastry)
Although Banh Tom is available almost everywhere in the country, it is best at the Nha Hang Ho Tay (Ho Tay Restaurant) on the banks of Truc Bach Lake, close to Ho Tay (West Lake) in Hanoi. While diners await the arrival of the hot fried shrimp pastry, they can enjoy the picturesque lake and landscapes offered by the vast expanse of water from West Lake and the tree-lined Thanh Nien Road.
The dish should be eaten as soon as it arrives at the table. The fried pastry is topped with red shrimps and is eaten together with dishes of spicy vegetables mixed with sweet and sour sauce.

Pho - Noodles
Pho is the most popular food among the Vietnamese population. Pho is commonly eaten for breakfast, although many people will have it for their lunch or dinner. Anyone feeling hungry in the small hours of the morning can also enjoy a bowl of hot and spicy pho to fill their empty stomachs.
Like hot green tea which has its particular fragrance, pho also has its special taste and smell. Preparations may vary, but when the dish is served, its smell and taste is indispensable. The grated rice noodle is made of the best variety of fragrant rice called Gao Te. The broth for Pho Bo (Pho with beef) is made by stewing the bones of cows and pigs in a large pot for a long time. Pieces of fillet mignon together with several slices of ginger are reserved for Pho Bo Tai (rare fillet). Slices of well done meat are offered to those less keen on eating rare fillets.
The soup for Pho Ga (pho with chicken meat) is made by stewing chicken and pig bones together. The white chicken meat that is usually served with Pho Ga is boneless and cut into thin slices. You could consider Pho Bo and Pho Ga Vietnam's special soups. Pho also has the added advantage of being convenient to prepare and healthy to eat.

Cha Ca (grilled minced fish)
Grilled minced fish has been served in Vietnam for more than 100 years. The Doan family of Cha Ca Street in Hanoi first invented this dish.
A wide variety of fish can be used in this dish including sturgeon and tuna. Tuna is low in fat, has an exquisite flavour, and few bones. The bones are separated from the meat and put into saffron water to be later used in a sauce. The fish is marinated in salt before being grilled.
What is interesting about this dish is that people can add their favourite condiments: coriander, mint, dill, shallots, and more.

Com (Grilled rice)
Grilled rice is mostly served in the fall. After collecting the rice from the fields, several steps have to be performed to obtain excellent com. After removing the grains from their hulks, the rice is wrapped in lotus leaves to keep it from drying and to allow it to absorb the lotus flavor.
Grilled rice can be found everywhere in Vietnam, but the best com is found in Vong village, 5 km from Hanoi. People in this village still use traditional secret recipes. People eat grilled rice with eggs, bananas, or sapodillas.

Com (boiled rice)
In Vietnam, com is eaten at the main meals of the day (lunch and dinner). Rice is eaten together with a variety of different dishes and is made from different kinds of rice. Typically fragrant rice is used, such as Tam Thom and Nang Huong. An ordinary meal may consist of boiled rice and the following:
Mon an kho (meal without soup) consists of dishes of pork, fish, shrimp, and vegetable cooked in oil, as well as vegetables, pickles, etc.
Mon canh (meal with soup) consists of a soup made with pork or spare-ribs, crab meat, and fish.
In the past several years, people in urban centers have begun to go out for lunch at the food stalls on the street. Consequently, there has been a proliferation of temporary food stalls along many sidewalks and public spaces in the cities. Some stalls are open until early in the morning to cater to regular customers. Around noon, owners can be seen arranging tables and benches along the pavement to form makeshift shop floors. After two or three hours, when there are no more customers, they begin to remove all of their wooden furniture, so that the place resumes its former appearance. A well served lunch for one is very inexpensive.

Banh Chung (Sticky Rice Cake)
bchun01.jpg (9667 bytes)Sticky rice cakes are a Vietnamese traditional dish that must be part of Tet meals. As a matter of fact, every Vietnamese family must have sticky rice cakes among the offerings placed on the altar to their ancestors.
Bang chung is made of glutinous rice, pork meat, and green beans paste wrapped in a square of bamboo leaves, giving the rice a green colour after boiling.
According to the legend, under the reign of the Hung Kings, Prince Lang Lieu created sticky rice cakes and presented them to his father. Bang chung won high acclaims from the King who awarded the prince his throne.
Making sticky rice cakes is a very meticulous job. To obtain the best cakes, rice has to soak in water for an entire day. The pork meat must include skin and fat, the green beans must be of the same size, and the bamboo leaves must be fresh. Squaring off and tying cakes with bamboo strings requires skilful hands.
Sticky rice cakes are available at any time of the year, although one is sure to enjoy them with relatives and friends during Tet. During Tet, rice cakes are served with gio lua and hanh muoi– lean meat pie and salted sour onions.

Lean pork pie is available in Vietnam only and has different names in the north and south. Foreigners as well as Vietnamese are fond of lean pork pie.
Gio lua consists of pork meat wrapped in fresh banana leaves. The little bundles are then boiled. The most delicious part of lean pork pie is the top layer since it absorbs the flavour of the banana leaves.

The pipes, usually made of bamboo or clay, typically consist of a small chamber (the bowl) for the combustion of the tobacco to be smoked and a thin stem (shank) that ends in a mouthpiece (the bit). Pipes can range from the very simple machine-made briar pipe to highly-prized handmade and artful implements created by
renowned pipe makers which are often expensive collector’s items.

Harsh life in a gentle river setting

In the high-tide season, a lot of people flock to the Mekong Delta not only to drift on the swollen rivers but to know more of the hardships and the lifestyle of people in the Delta.

Not boasting clear, blue water, the rivers of the Mekong Delta are a humble dark red year round. The build-up of alluvium from way upstream enters the Delta and gives the waters here their special color. TREKKING UP TO CO TO MOUNTAIN

Phung Hoang Son, or Co To Mountain, is the most beautiful among the several mountains of the That Son Range in the mountainous area of the Mekong Delta province of An Giang. The mountain is acclaimed as an ideal destination by pilgrims and tourists to experience the feeling of conquering the peak of a mountain and to take in a panoramic view of An Giang Province.

Co To Mountain is in Nui To Commune, Tri Ton District. It is about 5,800m long, 3,700m wide and rises 614 meters above sea level. Seen from afar, it looks like a phoenix, so people call the mountain Phung Hoang Son, which means “mountain of a phoenix”.
The That Son Range offers ancient relics, temples, pagodas and spectacular landscapes such as Cam Mountain, Ket Mountain, Van Linh Pagoda and Tuc Dup Hill. After experiencing all this, tourists should trek to the top of Co To Mountain.
It takes about 90 minutes to get to the top, longer if you stop to take pictures or bring small children. It is recommended to start the climb at 9 a.m. when the mist melts and the view is clear.
The path to the top of the mountain is a tortuous stone stairway winding up the mountain wall but shaded by dense green groves. Tourists should prepare equipment such as a mosquito net, hammock, flashlight, lighter and knife as well as dried food such as bread and noodles and some medicine. MUD BATHING IN PHAN THIET

Instead of going to the distant Nha Trang City to enjoy mud-bathing, tourists who travel the tourist routes through the coastal provinces in the South Central region now have another choice to try the service, Phan Thiet City.
Tourists enjoy mud-bathing at the Mui Ne Mineral Hot Mud Center in the coastal city of Phan Thiet.
The Mui Ne Hot Mineral Mud Center in Phan Thiet City, Binh Thuan Province is about 200 kilometers east of HCMC. The center is opposite the Tien Dat Resort in Phan Thiet.
Opened last year on an area of 4.5 hectares, the center offers warm mineral water soaking, warm mineral water bathing under a man-made water fall, hot mineral mud-bathing and many other services.
The center’s owner, Viet Tin Joint-Stock Company, is using a hot mineral water spring, around 800 meters from the center, and a mud mine in Tuy Phong District of the province.

Xử lý tình huống trong kinh doanh du lịch

Trong cuộc sống cũng như trong công việc hàng ngày chúng ta không tránh khỏi những tình huống xấu không mong muốn. Vậy chúng ta phải xử lý như thế nào nếu như chúng ta mắc phải những tình huống như vậy? Xin chia sẻ cùng các bạn cách xử lý một số tình huống thường gặp trong kinh doanh du lịch để mọi người cùng tham khảo.
Tình huống:
Belly acheKhi dẫn một đoàn khách trong nước đi tham quan và ăn trưa tại một nhà hàng mà công ty đã có quan hệ từ lâu. Không may sau khi ăn xong, một số vị khách có triệu chứng bị ngộ độc, gây nên tình trạng hoang mang cho tất cả du khách trong đoàn. Trong trường hợp này người quản lý của nhà hàng và công ty lữ hành phải giải quyết sao để vừa giữ được khách, vừa duy trì được mối quan hệ tốt đẹp của hai doanh nghiệp.
Xử lý tình huống:
Friendly waiterTrước tiên người đại diện của cả hai bên phải xin lỗi  tất cả khách và nhanh chóng đưa những người có triệu chứng ngộ độc đến bệnh viện để kiểm tra và phục hồi sức khỏe. Đồng thời đem phần thức ăn mà khách vừa dùng đến kiểm tra xem có vấn đề gì không. Trong lúc đó phải cử người trấn an những vị khách còn lại tại nhà hàng, cho họ biết đây chỉ là trường hợp xảy ra ngoài ý muốn. Sau đó tiếp tục chuyến hành trình vào buổi chiều hoặc nếu khách muốn thì đưa họ về khách sạn để nghỉ ngơi. Trong bệnh viện, sau khi kiểm tra nếu phát hiện là đồ ăn có vấn đề thì phải thật lòng xin lỗi khách mong họ bỏ qua, hứa bồi thường chịu mọi khoản chi phí có liên quan và tiếp tục hợp tác với công ty vào lần sau. Mặt khác, giải thích cho khách hiểu sai sót này chưa bao giờ sảy ra tại nhà hàng. Nếu không phải do đồ ăn thì sau khi khách hồi phục sức khỏe phải đến hỏi thăm xem họ đã ăn hoặc uống gì trước khi dùng bữa không. Nếu đúng thì đó là do khách đã dùng phải những loại thức ăn đồ uống kị với món ăn của nhà hàng. Khi đó phải ân cần khuyên họ lần sau nên tránh dùng chung những loại đó để bảo vệ sức khỏe. Sau đó quan tâm, chăm sóc khách một cách tận tình, chu đáo và đưa họ về khách sạn nghỉ ngơi. Như vậy thì dù lỗi là do nhà hàng hay do khách thì hai công ty cũng đã để lại một ấn tượng tốt đẹp cho khách về thái độ phục vụ. Đồng thời củng cố thêm mối quan hệ hợp tác của hai doanh nghiệp.
Tình huống:
FarmerCông ty của bạn đang có dự án xây dựng một khu du lịch sinh thái tại một đại phương làm nông nghiệp. Diện tích của khu du lịch nằm trong diện tích trồng lúa của rất nhiều hộ dân. Dự án này đã gặp phải sự phản đối quyết liệt của nhân dân địa phương. Như vậy công ty bạn phải làm gì để người dân bán ruộng một cách tự nguyện và vui vẻ.
Xử lý tình huống:
Happy famer and familyTrước tiên phải cử đại diện hoặc đích thân giám đốc công ty, thông qua chính quyền địa phương gặp trực tiếp người dân để trình bày về lợi ích của việc phát triển du lịch tại địa phương. Có chính sách bồi thường hợp lý và tạo việc làm cho người dân trong khu du lịch sau ki đã xây dựng xong. Định hướng giúp họ xây dựng và phát triển ngành kinh tế dịch vụ thay thế cho kinh tế nông nghiệp truyền thống. Đồng thời, gợi ý cho họ về việc hướng con cái theo học ngành du lịch vả sẽ ưu tiên cho con em họ vào làm sau khi học xong nếu như đáp ứng được yêu cầu của công ty. Với những việc làm thiết thực và thỏa đáng như vậy thì chắc chắn người dân địa phương sẽ vui vẻ đồng ý trong thời gian gần nhất và sẽ nhận được sự phối hợp hiệu quả giữa công ty du lịch và người dân địa phương sau khi khu du lịch đi vào hoạt động chính thức.
Tình huống:
Dropped food plateTrong khi dự tiệc tại nhà hàng một vị khách đã làm rơi dao dĩa và thức ăn xuống sàn nhà. Là người phục vụ thì bạn giải quyết như thế nào?
Xử lý tình huống:
Trong trường hợp này, nhân viên phục vụ bàn phải tỏ ra thân thiện như không biết đến để giảm phần lùng túng, lo lắng cho vị khách đã gây ra sơ suất. Tránh gây sự chú ý ra xung quanh, nhanh nhẹn, khẩn trương dùng khăn ăn để lau hoặc che chỗ thức ăn bị đổ. Lấy thìa dĩa bổ sung cho khách, sau đó có đôi lời trấn an tế nhị đồng thời chuyển sự chú ý của mọi người sang chủ đề khác.
Tình huống:
WaiterTrong khi quá bận rộn và khách quá đông, bạn vô tình đã vô tình phục vụ sai món cho khách, làm cho khách vô cùng bực mình.
Xử lý tình huống:
Đây là lỗi của bồi bàn vì đã không cẩn thận. Một người bồi bàn chuyên nghiệp sẽ không gây ra những lỗi tương tự như thế này. Trong trường hợp này phải nhanh chóng xin lỗi khách và phục vụ ngay món họ cần kèm theo những lời nói đẹp mang tính giới thiệu về món ăn và khen ngợi về sự lựa chọn của khách.
Khách làm hư hỏng tài sản của khách sạn
Reception- Sau khi được thông báo thiết bị hoặc vật dụng của khách sạn bị khách làm hư hỏng, nhân viên phục vụ buồng mời những nhân viên có trách nhiệm đến ngay hiện trường để xem xét, bảo lưu hiện trường và lập biên bản.
- Sau khi khách xác nhận, căn cứ mức độ tổn thất nhẹ hay nặng, căn cứ giá cả bồi thường do khách sạn quy định để thông báo cho khách.
- Nếu khách không đồng ý mức bồi thường và không thể thuyết phục được thì giá bồi thường căn cứ theo quyền hạn mà miễn giảm: Khi thông báo, nếu thấy cần thiết thì Phó Giám đốc Lễ tân phải cùng các nhân viên liên quan dẫn khách đến xem xét hiện trường, nói rõ trạng thái ban đầu, cho khách xem những điều ghi chép có liên quan.
- Nếu mức bồi thường vượt quá quyền hạn quyết định của Phó Giám đốc Lễ tân thì phải báo cáo với cấp tiến để xử lý.
- Trường hợp sự bồi thường có liên quan đến khách quý thì phải báo cáo với lãnh đạo khách sạn để xin ý kiến, sau đó chuyển kết quả đến nhân viên đi theo khách hoặc đơn vị tiếp đón khách đề nghị họ thực hiện.
- Nếu khách không ở trong khách sạn phải bảo lưu hiện trường cho đến khi kết thúc việc bồi thường.
- Nếu khách đồng ý bồi thường thì phải yêu cầu nhân viên có liên quan làm hóa đơn ngay để khách hoặc người tiếp đón khách ký giấy bồi thường.... Read more

HUE COURT MUSIC


- In Hue Court Music there is the process of integrating, adopting and modifying Chinese, Champa cultures and Buddhist, Confucian impacts. Apart from using some Chinese court music models, this special trait is hidden even in some Vietnamese tunes and motives, and in the use of some modes and musical instruments, etc.
- Being closely connected with "tuong" (hat boi) art: Tuong is an almost permanent art kind in court cultural activities and a necessary item in the ceremonies of the enthroning of Nguyen Dynasty. Tuong and court dances are closely associated. The principal gestures of tuong dances, in which students of tuong should be trained, are the very gestures of "flowers" dance. Many melodies in court dances are tuong melodies.
- Richness and diversity: Hue Court Music synthesizes itself the abundance and diversity in many aspects. In the art-type aspect, it contains all elements of music, dance, drama, prose, poetry, fine arts (decorative art, carving and inlaying of musical instruments as well as the dresses and implements of artists, etc). In the genre aspect, it is composed of ritual music, chamber music, stage music, instrumental music, vocal music, music for dance and acting. Hue Court Music is diversified in types of instrument and timbre, in repertoires, in kinds of orchestra organization and ensemble forms (duo, trio, quintet, sextet, etc.). Its performance environment could be indoor or outdoor, at shrines or worshipping rostrums, on stages or on boats, etc. It is rich in melody too, (the Bac, Xuan, Ai, Dung, Thien ... nuances with different characteristics and sonorities). So Hue Court Music could satisfy both the spectators' audition and vision by its abundance "dishes of different tastes".

- Large scale and highly professional: As the official music of the state, Hue Court Music consists of many large scale orchestras, many music and dance items were performed by a big staff of instrumentalists, singers and dancers. For example, the "Co xuy Dai nhac" orchestra is composed of over 40 instrumentalists, "Bat dat" or "Bai bong" dances are performed by o4 dancers, not including instrumentalists.

- The former royal instrumentalists were the talents selected from the whole country. They were nursed and trained for many years, even from childhood to be highly professional musical executants.

- High degree of improvisation and variation of the melodious scheme (mainly in chamber music and tuong). For the same melody, musical instruments can perform differently to show their distinctive advantages; the instrumentalists can also play the same melody in various ways according to mood, inspiration and performance environment, etc. In music performance this improvisation and variation is not free because they are regulated by rigid rules. Moreover, improvisation is a criterion to value the artist's talent. Correct and good improvisation can only be obtained thanks to inborn talent, long - run learning and training. Possibly, due to this trait, a chamber' orchestra is composed of the single instruments, which helps to create an intimate, heart-to-heart atmosphere.

- Scholarship: This trait is expressed in many aspects as follows:
+ Being written music thanks to a system of musical characters and signs to record .melodies.
+ Music is built in accordance with the ancient cosmology. In order to exist, to harmonize, and develop the cosmos as well as all living substances and aspects of life (including music) are subject to and controlled by the rules of Yin and Yang.
+ There was a system of music theory composed of rules and conceptions controlling the classification of the two music repertoires (presented above) linked with different methods of string stirring and pressing, musical scales, etc, and other rules. Therefore, improvisation should abide by defined rules. Although this music is written and coded, the oral tradition of learning and teaching is still necessary in order to improve correctly.
+ Han language and some kinds of Chinese poetry are used in the lyrics. (This is former scholarly kind of the Viet's language and literature comprehensible only to aristocrats and intellectuals).

The present preserved Hue Court Music, including Nha nhac (ritual court music) constitutes only a small part of the former Hue Court Music in particular and the Vietnamese Court Music in general. Moreover, it has not been preserved intact. Despite of all these facts, it is a precious crystal of Vietnamese artistic intelligence and talent throughout over thousands of years. So, it is not a chance that on 7th November 2003 Nha nhac, Vietnamese Court Music, that Hue has preserved so long, was officially listed by UNESCO among masterpieces of the Oral and intangible heritage of humanity.

According to data collected in a recent field-study conducted by the British Cave Research Association (BCRA), the total length of the Phong Nha - Ke Bang cave system - as surveyed up to 1997, is 64,386m, comprising 17 separate caverns in two distinct systems, both located in Bo Trach district. The Phong Nha system has 9 caves, with a total surveyed length of 33,758m, while the Vom system has 9, with a total length of 30,627m.
The Phong Nha cave itself (which lends its name to the whole system), in Son Trach village, is probably the most beautiful of all the caves in the region. As studied in 1987, it has a length of 7,729m, and at its maximum point, the ceiling height is 83m. The cave contains many fascinating rock formations, enchanting visitors with evocative names such as Lion, Fairy Caves, Royal Court, Buddha…
The results of their study have enabled BCRA to publish a number of scientifically valuable works about the region. In comparing Phong Nha with other cave systems of the world in general, and of Vietnam in particular, the organization has commented: “Phong Nha, over a 200,000ha. area, has by far the longest underground rivers, the largest caverns and passageways, the widest and prettiest sand banks, and the most astonishing rock formations.”
Nevertheless, Phong Nha - Ke Bang is not famous merely for the marvels of its caves and river, but also for its forests and woods. Research documents from the Institute of Forestry Research have asserted: “The topography of Phong Nha - Ke Bang is a mixture of earth and limestone mountains, with a 90% surface vegetation coverage rate. Of this, 19% by area is occupied by primitive forests, with a huge, and probably unique, biological diversity, containing numerous plants and animals currently listed in the Red Books of protected species of Vietnarn and the world.”
Phong Nha - Ke Bang is also home to the Ruc tribe, only a very small number of which now remains. This is a primitive, cave-dwelling community which, up till only very recently, retained a stone-age way of life and a hunter-gatherer existence.
The Vietnamese Government recently declared Phong Nha-Ke Bang a National Park with 150,000 ha of the area have been placed immediately under the strict management of the local authorities.
After Vietnam joined the international Convention on the Protection of Nature on October 19, 1997, Phong Nha - Ke Bang became one of six regions nominated by the Vietnamese Government to be considered by UNESCO as an official World Natural Heritage Site. Cooperation between the local authorities of Quang Binh province with the Ministry of Culture, the Institute of Forestry Research, and the Ministry of Agriculture and Rural Development have resulted in a comprehensive program to protect and develop this precious natural resource.

TET HOLIDAY - FAMILY REUNION

Tet - Vietnamese and Chinese Lunar New Year, is the most important Festival of Vietnamese people. This scared Festival sometime between late January or early February (depend on Lunar Calendar ) and Tet has become so familiar to the Vietnamese that when Spring arrives, the Vietnamese, wherever they may be, are all thrilled and excited with the advent of Tet, and they feel an immense nostalgia, wishing to come back to their homeland for a family reunion and a taste of the particular flavours of the Vietnamese festivities.. Although officially a three-day affair, festivities may continue for a week or more with every effort made to indulge in eating, drinking, and enjoyable social activities. It is also a time for family reunions, and for paying respect to ancestors and the elders. Gifts of food are made to friends, neighbors and relatives in the days before Tet.
The Tet of the New Year is, above all, is an opportunity for the household genies to meet, those who have helped during the year, namely the Craft Creator, the Land Genie and the Kitchen God. Tet is also an opportunity to invite and welcome deceased ancestors back for a family reunion with their descendants to join the family's Tet celebrations. Finally, Tet is a good opportunity for family members to meet. This custom has become sacred and secular and, therefore, no matter where they are or whatever the circumstances, family members find ways to come back to meet their loved ones, gather for a dinner of traditional foods like bánh chưng  (a square cake made of sticky rice stuffed with beans and pork), măng (a soup of boiled bamboo shoots and flied pork) and xôi gấc (orange sticky rice). This is followed by a visit to the local pagodas
Everyone is in a rush to get a haircut, buy new clothes, spruce up their homes, visit friends, settle outstanding debts, and stock up on traditional Tet delicacies. Businesses hang festive red banners which read "Chuc Mung Nam Moi" (Happy New Year) and city streets are fes­tooned. With colored lights. Stalls spring up all over town to sell mut (candied fruits and jams), traditional cakes, and fresh fruit and flowers. Certain markets sell nothing but cone-shaped kumquat bushes. Others sell flowering peach trees, symbols of life and good fortune which people bring into their homes to celebrate the coming of spring. As vendors pour into the City with peach trees strapped to their bicycles, the streets look like moving pink forests.
